Plum Lyon is your home base. It's where we gather in our fully equipped, spacious teaching kitchen for private cooking classes each day. An immersive exploration into the building blocks of French cuisine and Christmas season culinary traditions.
Each day also includes guided visits to a variety of local Lyonnais venues and dining establishments to consult with experts, sample, taste, explore, and to gather both information and ingredients. Together, we discover the underbelly and dig out history and essence of what makes Lyon France's culinary capital.
During your 5 day program (5 full days of morning visits and classes in the afternoons, Tuesday morning through Saturday evening), we master technique and progressive building blocks of classic French cuisine, with the goal of working through several French traditional holiday dishes.
Each day's itinerary is carefully built with a balance of cooking classes and visits with the trappings of the local culinary festivities in the Christmas season in mind. It includes visits to local artisans, Lyon's Marché de Noël, and other "must do"s in Lyon during the holiday season. This multi-day series is designed to build skills and knowledge progressively and will provide you with everything you need to prepare a Réveillon Feast in the classic French tradition, and more. It is appropriate for all levels of cook, from very beginners to experienced culinary enthusiasts. The only pre-requisite is a love for the cuisine of France, and a desire to learn more about the beautiful city of Lyon at Christmas time.
EACH PRIVATE IMMERSIVE CULINARY WEEK ALSO INCLUDES:
+Exploration of Lyon's culinary history and gastronomic landscape, to reveal the delightful unique aspects of Lyonnais Bouchons, Les Mères Lyonnaises, and the new generation bistrot, from old school to new.
+Lunch each day is provided, evenings are left free to explore according to your rhythm.
+ Lucy has a list of lodging options if you need them, her bonnes adresses for dining and other activities in Lyon, provided to all registered participants, to assist with your planning.
+Visits to multiple iconic markets and culinary venues and consults with industry experts in the historic city of Lyon.
+Yours to keep: Aprons, towels, a handbook with recipes and room for notes.
What's not included: Transport to and from Lyon, lodging, meals outside of lunch time.
About Plum Lyon: The Plum Lyon Kitchen welcomes you to come and cook in Lyon, the gastronomic capital of France. Located in the ancient silk-worker's district on the hill of the Croix Rousse, a UNESCO World Heritage site, the Plum Lyon Teaching Kitchen is offering seasonal market classes, classic French cooking, week-long immersive programs, children's workshops in English, and single subject ateliers that cover a chosen technique or theme in French cuisine. We accommodate a maximum of 6-8 students per class. There is plenty of opportunity for hands-on learning in our classes.
Lucy Vanel has been teaching the culinary arts in Lyon, France since 2007. Holding both French and American nationalities, her passion for La Cuisine Lyonnaise and la cuisine Française has ruled her every waking moment (and sometimes her dreams) since she moved to Lyon from Los Angeles in the year 2000. Lucy created this Immersive week of French cuisine with the goal of offering a deeper longer experience than her full day workshops, and to share her local knowledge with small groups of likeminded people. The workshops overlap to include multi-day preparations and progressively teach more of the building blocks of classic French and regional cuisine than any one-day workshop could ever cover.
