French Tartes Series
Come to Plum Lyon Teaching Kitchen and add an impressive classic French tarte to your repertoire in our comfortable, air-conditioned kitchen!
There is a reason that every hopeful candidate in France's yearly national professional pastry exam must learn techniques and recipes from a vast repertoire of French tartes in order to pass qualification as a pastry chef. French tartes can be simple, common, rustic, regional, seasonal and on kitchen tables in every nook and cranny of the countryside, but they may also include exact technique and that fulfills codified requirements for the work of a professional French pâtissier.
Each 2 hour afternoon workshop covers one French tarte, including the recipe for its specific crust, the rolling and French ring lining techniques, as well as the classic creams, fillings, garnitures and nappage specific to the tarte you are learning, with discussion of possibilities for variation. You will leave your class with the technique for that specific tarte, its corresponding recipe, and the tarte you prepared in class.

Tarte au fruits rouges : Berry / vanilla pastry cream
Tarte abricot pistache : Apricot / almond cream / Pistachio
The Autumn Tartes :
Tarte Bourdaloue : Pear and almond cream
Tarte Tatin: caramel apple upside down
Tarte aux pralines Lyonnaise : Pink praline tart
Pkease note: This workshop covers one tarte per workshop, for a series of workhops throughout the season.
ABOUT PLUM LYON: The Plum Lyon kitchen welcomes you to come and cook in Lyon, the gastronomic capital of France.
